I made these right before CNY and since I was so tired after work, I made these really big. Saves time ma.... It's the same recipe as the peanut cookies, just substitute peanut with almond and increase oil to 120ml.

Peanut Cookies
For this year's Chinese New Year, I made 4 types of cookies (crazy??); pineapple tart, almond cookies, peanut cookies and cornflakes cookies. Of the 4, pineapple tarts and the peanut cookies are favourites. I made some for in laws, my family and also friends. It was too bad that right before CNY was a busy period at work, otherwise I think I would have tried out more recipes :)
Here's to share with you a very simple and nice peanut cookies recipe.
Ingredients:
Ground Roasted Peanut (120gm)
Plain Flour (180gm)
Baking Soda (1 tsp)
Baking Powder (1 tsp)
Caster Sugar (120gm)
Oil (110ml)
Egg Yolk - beaten (1)
Preheat oven at 170C.
Method:
1. Mix everything together except the egg yolk in a big bowl.
2. Take some of the mixture and form into small round shape.
3. Place it onto a lined baking tray.
4. Repeat until dough is finished. Glaze with egg yolk.
5. Bake for 15-20min.
6. Store in container when cooled.

Cornflakes Cookies
This is really very easy to make. I modified the recipe a little from the original version to speed up the process because I don’t want to be baking till the clock strikes midnight ;pThe original recipe calls for the cookie to be rolled in the crushed cornflakes before baking. I just mixed everything in :)
Ingredients:
Flour (2 cups)
Cornflakes – crushed (2 cups)
Salt (1/4 tsp)
Butter (1 cup)
Sugar (2/3 cup)
Vanilla essence (1tsp)
Preheat oven at 190C.
Method:
1. Mix butter, sugar, salt and vanilla essence and beat till combined.
2. Add in flour and corn flakes. Mix until it forms soft dough.
3. Portion and shape into small round balls. Flatten using a fork and place on a baking tray.
4. Bake for 20 minutes.
Note: This recipe yields one medium size container of cookies.

Almond Cookies
I have not been baking cookies for some time, so it's time to try out new cookie recipes again :)
This is a recipe from Amy Beh in kuali.com. Just search for almond or cookies and you will find the recipe there. As usual, for health reason (although I doubt it makes much difference with the amount of butter used ;p) I cut down on the amount of sugar and butter by 10-20gm. I like almond so I increased the ground almond used by ~15gm. I also put on some 'make up' for the cookies before baking (brush them with beaten egg ;p) to give it the light golden colour.

I brought them to church for tea refreshment and Brother SB and the VIP think it's nice. :) I think the cookies are a little hard which could be due to the higher temp which I used in baking. The deco of the cookies made them looked like they're peanut cookies huh ;p This is easy to make and doesnt require much effort, so I think I will bake them again with a little variation next time!

Pineapple Tarts
I am so excited to share this with anyone who loves pineapple tarts and I think this is the first cookie most of us will ‘attack’ during the Chinese New Year :)
We would think it must be very difficult to churn out these lovely cookies and I am of no exception. BUT…after I have tried this recipe, I am telling you it’s as easy as 123, even easier than making muffins!
I wanted to bake some cookies since a friend from church said she likes cookies better compared to cakes and other pastries. So, I thought why not I try make some and let her and the rest try it?? And I’ve always been a fond reader of kuali.com especially Amy Beh’s recipes, so this is where I found this amazing recipe for pineapple tarts.
The best thing is; pineapples were on sale in Tesco. Only MR0.89 for 1 whole pineapple!!! At that time, I was actually trying to imagine how much is the profit margin for those who sell these cookies during the festive season. Hahaha…
