Lettuce with Pork Floss

This is my fav way to cook lettuce because it's so easy and yet taste good. Hubby loves it too.



Ingredients:
Lettuce
Garlic
Oil
Light Soy Sauce
Water
Pork Floss


Method:
1. Boil water and blanch lettuce for about 1/2min or less.
2. Dish up on a plate.
3. Heat oil and saute garlic till it starts to brown.
4. Scoop up garlic and oil and pour onto the lettuce.
5. Drizzle 1tbsp of light soy sauce over the lettuce. Sprinkle pork floss over it.
6. Serve with rice.

Stir Fried Bean Sprouts (Taugeh) with Chili and Dried Shrimps


A simple and tasty dish....

Ingredients:
Bean Sprouts
Dried Shrimps (soaked and chopped)
Chili
Garlic
Salt
Water
Oil


Method:
1. Heat oil and saute garlic till fragrant.
2. Add in dried shrimps and chili and stir fry till fragrant.
3. Add in bean sprouts. Stir fry over high heat for 1min.
4. Season with a little salt and add a bit of water.
5. Continue to stir fry over high heat for about 1/2min. Dish up and serve with rice.

Another backdated post....;p

For lunch, we had a simple stir fried lettuce, carrot and radish soup and pumpkin with mushroom in bean paste.



Carrot & Radish Soup

Ingredients:
Carrot
Radish
Onion
Chicken
Water
Salt


Method:
1. Boil water and pour in everything (except salt).
2. Cook for at least 2 hours.
3. Season with salt.


Pumpkin with Mushroom in Bean Paste

Ingredients:
Pumpkin (cut into cubes)
Chinese Mushroom (soaked till soft and cut into cubes)
Dried Shrimp (chopped)
Bean Paste
Garlic
Oil
Water


Method:
1. Heat oil and saute garlic.
2. Add in dried shrimp and bean paste and stir fry till fragrant.
3. Add in mushroom and stir fry for 1min.
4. Add in pumpkin. Stir fry for another min.
5. Add water. Cook till pumpkin is soft.
6. Goes well with rice!

Stir Fried TomYam Ladies Fingers

This was an experimental dish simply because I didn't have any chili at home ;p It turned out quite well and very easy to do. Good if you'te lazy to cook :)



Ingredients:
Ladies Fingers (sliced thinly)
Garlic
Dried Shrimp (chopped)
TomYam Paste
Salt
Oil
Water


Method:
1. Heat oil in wok and saute garlic.
2. Add in dried shrimps and tomyam paste. Stir fry till fragrant.
3. Add in ladies fingers. Season with a little salt.
4. Stir fry for 2min.
5. Add a little water, and continue to stir fry until the ladies fingers are cooked (I like it soft, so usually will cook for a longer time).
6. Dish up when done.

Arrowhead with Pork in Bean Paste

For those of you who are familiar with this dish, you would think I should use the reddish preserved beancurd called "nam yu" but well, I realised the bottle that I have had expired ;p Oops...so, what to do? Use la whatever is available :) So, now I can tell you that it's taste pretty good too with bean paste.




Ingredients:
Arrowhead (sliced)
Pork (sliced)
Garlic
Bean Paste
Water
Oil


Method:
1. Heat oil and saute garlic.
2. Add in arrowhead and stir fry for 1-2min.
3. Add in pork and bean paste. Stir fry for 1min.
4. Add some water and let it simmer then turn to medium-low heat.
5. Once pork is cooked, dish up.

Family Dinner

Hubby and I had a satisfying dinner tonight and it was fun because this time hubby cooked 2 dishes! Today, he cooked stir fried siew pak choy and an onion omelet. Both are yummy. The vegetable dish is the same as the one he did before but this time we used siew pak choy instead of yau mak. Hehe...it's for him to practise so everything is the same except the vege used.


Stir Fried Siew Pak Choy



Onion Omelet



Braised Fish with Bean Paste & Tomatoes

Onion Omelet

Ingredients:
Eggs
Onions
Salt
Pepper
Oil

Method:
1. Beat the eggs and sprinkle some pepper into the mixture.
2. Heat a little oil and saute the onion until it turns a little brown.
3. Season with a little salt.
4. Spread onion evenly then pour in the beaten egg mixture. Let it cook/set.
5. Turn the egg and when it's cooked, dish up.


Braised Fish with Bean Paste & Tomatoes

Ingredients:
Fish
Salt
Ginger
Tomatoes
Preserved Bean Paste/whole beans
Water
Oil

Method:
1. Rub salt onto both sides of the fish.
2. Heat some oil and fry the fish until golden brown and cooked on both sides.
3. Dish up and set aside. Pour out the oil and leave only a little oil in the wok.
4. Saute ginger till fragrant.
5. Add in bean paste and tomatoes. Stir fry for 1/2min.
6. Add in water and cook till it simmers.
7. Add in the fish and let it cook for 1-2min and it's ready to be served.

A Simple Dinner

I am now on a "restricted" mode when it comes to doing any housework, so most of the meals that I cook now are really simple and almost effortless dishes. We had steamed chicken with ginger and stir fried vegetables for dinner. This is the first time hubby cooked a vege dish (well, the other dish he did was onion omelet long time ago ;p). It was fun to cook together and I hope we can do this more often :)




Steamed Chicken with Ginger

Ingredients:
Chicken (cut into medium size pieces)
Ginger (cut into thin strips - I prefer young ginger)
Garlic (chopped)
Salt
Sesame Oil

Method:
1. Rub the chicken with a little salt.
2. Arrange the chicken on a plate and sprinkle garlic and ginger over it.
3. Drizzle about 1 tbsp of sesame oil over it.
4. Steam till cooked (I put it on a rice cooker steamer and cook it together with the rice).





Stir Fried Yau Mak Vegetables

Ingredients:
Yau Mak
Garlic (chopped)
Salt
Oyster Sauce
Oil
Water

Method:
1. Heat a little oil in a wok and saute garlic till fragrant.
2. Add in the vegetables and stir fry for a while.
3. Season with oyster sauce and a little salt to taste.
4. Stir to mix well. Add a little water if too dry.
5. Dish up when it boils.

Dinner 15May09 (Stir Fried Cabbage & Carrot with Egg, Turmeric Chicken and Beef in Black Pepper Sauce)

Yay!!! It’s Friday and to celebrate the coming weekend, what better to do than cook dinner! Not like there is anything special to celebrate, but I’d always welcome the weekend since it’s a time of rest. So, here's what we had for dinner and this time I tried cooking beef. I think I've overcooked it a little. Hhmm...don't have much experience in the beef department ;p



Stir Fried Cabbage and Carrot with Egg

Turmeric Chicken

Stir Fried Beef in Black Pepper Sauce

Stir Fried Cabbage and Carrot with Egg
Ingredients:

Cabbage
Carrot
Garlic
Egg (beat with some pepper)
Salt
Oyster Sauce
Oil


Method:
1. Heat oil and sauté garlic for 1min.
2. Add in cabbage and carrot. Stir fry for 1min.
3. Season with some oyster sauce and salt.
4. Pour in the beaten egg. Let the egg cook for a while before continue to stir fry for another 1min.
5. Once the egg is cooked, dish up.


Turmeric Chicken
Ingredients:
Chicken Meat
Garlic
Ginger
Sesame Oil
Salt
Sugar
Turmeric Powder
Light Soy Sauce
Water Oil

Method:
1. Marinate chicken with turmeric powder, light soy sauce, sesame oil and salt for ~30min.
2. Heat oil and sauté garlic and ginger till ginger turns a little crispy.
3. Add in the marinated chicken and stir fry for 1-2min.
4. Pour in some water and let it simmer for a while.
5. Season with salt and sugar. Cook till chicken is tender/cooked.
6. Serve with rice.

Stir Fried Beef Slices in Black Pepper Sauce
Ingredients:
Beef Slices
Green Bell Pepper
Onion
Ginger
Salt
Black Pepper Sauce (mix with some water)
Water
Oil

Method:
1. Heat oil and sauté ginger for 1min.
2. Add in onion and bell pepper. Stir fry for 1min.
3. Add in beef slices and black pepper sauce and salt.
4. Do a quick stir fry and it’s done.

Dinner 13May09 (Steamed Fish in Light Soy Sauce & Stir Fried Winged Bean)

I cooked dinner again today and am glad that I have the time to do it. As usual, I don’t cook complicated stuff especially during weekdays. Dinner for today includes steamed sutchi fillet in light soy sauce (very easy and yummy!), stir fried winged beans (one of my fav dish) with dried shrimp and chili and the idiot-proof onion omelet (since it’s idiot-proof, I am not going to jot down the recipe ;p).


Steamed Sutchi Fish Fillet

Stir Fried Winged Beans with Dried Shrimps and Chili

Steamed Sutchi Fillet in Light Soy Sauce
Ingredients:
Sutchi Fish Fillet
Ginger (sliced)
Light Soy Sauce
Spring Onion (take the white part near the root and cut into 2cm length)
Parsley
Oil
Sesame Oil

Method:
1. Steam fish fillet with ginger (I placed it on a steamer in the rice cooker while cooking rice- save time ma…). Drain any liquid from the steamed fish. Leave aside.
2. Heat a little oil in a wok and sauté the spring onion until it turns a little soft.
3. Pour in light soy sauce. You can add a little water if you do not want it to be too salty.
4. Cook for 1min then dish up and pour sauce over the steamed fish.
5. Drizzle a little sesame oil over it and garnish with a little parsley. Serve hot!


Stir Fried Winged Beans with Dried Shrimps and Chili
Ingredients:
Winged Beans
Garlic
Dried Shrimps
Chili
Salt
Water
Oil

Method:
1. Use a blender or food processor and blend together garlic, chili and dried shrimps.
2. Heat oil and sauté the blended ingredients until fragrant. Add a little bit of salt.
3. Add in winged beans and stir fry over medium to high heat for 1-2min.
4. Add a little water and stir fry till the water dries up a little.
5. Dish up and serve with rice.

Stir Fried Asparagus with Sesame Seed

A very quick and easy stir fried dish and yet very tasty! The original recipe is from this website:

I modified it according to what I have in the kitchen ;p So, this is what I did....

Ingredients:
Baby Asparagus
Ginger (minced)
Garlic (minced)
Onion (minced)
Sesame Seed
Sesame oil
Light Soy Sauce


Method:
1. Heat the sesame oil and stir fry all the minced ingredients & the sesame seed till fragrant.
2. Add in the asparagus and stir fry for 1min or so.
3. Add in light soy sauce and do a quick stir fry and it's done!

Mixed Green Salad


This is about mixing whatever vegetables you like to eat, drizzle with the dressing, toss and serve! I brought this for church lunch today and one of the sisters asked me if this is some Italian dressing because she thought it was nice. Well, if you realize, I seldom do salads and know nothing much about western style cooking, so I have no idea what Italian dressing is or if there is such a thing ;p Hahaha…
Anyway, I am glad that even the ‘meat person’ VIP likes it :)


Ingredients:
Olive oil (I used extra virgin olive oil)
Lemon Juice
Garlic (crushed)
Sugar
Parsley (chopped finely)
Apple Cider Vinegar


Method:

1. Just mix everything together and toss it with the greens.

Don’t ask me about how many tsp or tbsp for those ingredients because I just agak-agak lo…;p

Stir Fried Celery with Carrot & Button Mushroom

This is definitely a quick stir fry dish and you can have many variations depending on the vegetables of your preferred choice.


Ingredients:
Celery
Carrot
Button Mushroom
Garlic
Oyster Sauce
Salt
Water
Oil

Method:
1. Heat oil in a wok and saute garlic.
2. Add in carrot and celery and stir fry for 1min.
3. Put in button mushroom. Season with oyster sauce and salt.
4. Add in water and cook for 1-2min and it’s ready!

Pumpkin & Potatoes with Dried Shrimps

Have I stopped cooking? No….absolutely not! I’ve been really busy with work and didn’t have time to update my blog. So, here are some of the back dated posts starting with this one.

I am not a fan of pumpkin but since all vegetables do us good, I try to eat more variety of it. My mum seldom cooks pumpkin for us, so I don’t really have a family recipe for this. Anyway, this is nice and the taste is appetizing (goes well with white rice).




Ingredients:
Pumpkin (cut into cubes)
Potatoes (cut into small cubes)
Garlic
Bean paste
Dried Shrimps (soaked in water and chopped)
Sugar
Water
Oil

Method:
1. Heat a little oil in a wok and saute the garlic till fragrant.
2. Put in the dried shrimps and stir fry for 1-2min.
3. Add in potatoes and stir fry for 2-3min.
4. Mix in the bean paste.
5. Add pumpkin and season with sugar.
6. Pour in some water and cook till soft.

Stir Fried Choy Sam in Oyster Sauce


Ingredients:
Choy Sam (in Cantonese ;p)
Button Mushrooms
Carrot
Garlic
Oyster Sauce
Salt
Water
Oil


Method:
1. Heat a little oil in wok and sauté garlic.
2. Add in button mushrooms and carrots. Stir fry for 1-2min.
3. Add in choy sam and stir fry for 1min.
4. Season with oyster sauce and salt.
5. Add some water and let it simmer for 1min.
6. Serve hot with rice.

Stir Fried Cucumber with Red Bell Pepper


Ingredients:
Cucumber (cut into slices)
Red bell pepper (cut into small pieces)
Garlic (chopped)
Dried shrimps (soaked and roughly chopped)
Salt
Oil
Water


Method:
1. Heat oil in a wok and brown garlic.
2. Add in dried shrimps and stir fry till fragrant.
3. Put in red bell pepper and cucumber. Stir fry for 4-5min.
4. Season with salt.
5. Add some water and cook till it simmers and cucumbers are soft.

Stir Fried Potatoes in Dark Soy Sauce

A stand alone dish?? Almost….since it’s only potatoes and onions.
Well, I really don't have much vegetables left in the fridge, so I just cook whatever that's left ;p
Although this is simple, it taste nice :)



Ingredients:
Potato (cut into slices)
Onions (cut into wedges)
Dark soy sauce
Pepper
Salt
Sugar
Oil
Water


Method:
1. Heat a little oil in a wok and saute the onions.
2. Put in the potatoes and stir fry for 5-6min.
3. Add in dark soy sauce, salt, sugar and pepper. Mix well.
4. Add enough water and cook till potatoes are soft.

Stir Fried Lettuce

Method:
1. Heat oil in a wok and saute garlic for 1-2min.
2. Add in carrot and button mushroom. Stir fry for 3-4min.
3. Add in lettuce and season with some salt and soy sauce.
4. Add a little water.
5. Cook till it boils and dish up.

Loh Hon Cai


This is one of my favourite vegetarian dishes but I have not had it for a long time. Well, eoconomy rice stalls don’t always have this and I only go back to my hometown once or twice a month. Each time I am back, there would be too many things I wanted to eat, so I never really thought of this when my mum asked that standard question “What should I cook tomorrow?” ;p

It happens that Sunshine supermarket was selling vegetarian stuff last 2 weeks and I just knew I had to try this dish again when I saw the pre-packed ingredients. VIP, with his “must have meat” in every meal expectation likes it too. So, it means I can cook this again in the future. Haha…

Note: Usually “fatt choy” is added to this dish but I omitted it since it was not included in the pre-packed ingredients.



Ingredients:
Glass noodles
Beancurd stick
Dried Chinese mushroom
Black fungus
Dried lily bulbs
(soak all the above ingredients in water until soft)
Chinese cabbage
Garlic
Preserved beancurd (mashed and mix with some water)
Salt
Sugar
Oil
Water



Method:

1. Heat a little oil in the wok and stir fry garlic till light golden.
2. Put in all the soaked ingredients and Chinese cabbage and stir fry for 2-3min.
3. Pour in the preserved beancurd mixture and season with salt and sugar.
4. Add more water and cook till cabbage is soft and it’s ready to be served.

Stir Fried Broccoli

Ingredients:
Broccoli
Carrot
Shallot
Oyster sauce
Salt
Oil
Water


Method:
1. Heat oil in wok and sauté shallots for 1-2min.
2. Put in carrot and broccoli and stir fry for 3-4min.
3. Season with oyster sauce and salt. Add some water.
4. Let it simmer till boiling and cook for 1 more min before serving.
