All-In Muffin

You could be wondering what muffin I am talking about. Well, I am trying to clear my stock of baking ingredients and I tried to put in many different things into this muffin, thus the name "all-in". Hahaha.... I guess this will be my last bake before my little girl comes and hopefully I will be able to find some time to bake again very soon! These muffins are easy to make and it smells good!

If you do not have milk or for some reason coulnd't take milk, you can substitute it with soy milk. I just use about 3-4tbsp of soy powder and mix it with water. Works well!


Ingredients:
Plain Flour (2 cups)
Sugar (3/4 cup)
Salt (1tsp)
Baking Powder (3 tsp)
Poppy Seed (2-3 tbsp)
Egg (2)
Oil (1/4 cup)
Milk (1 cup)
Chocolate Chips
Red Cherries (chopped coarsely)
Toasted Walnut

Preheat oven at 200C

Method:
1. Mix flour, baking powder, salt, sugar and poppyseed in a bowl. Set aside.
2. Mix eggs, oil and milk evenly. Pour this mixture into the dry ingredients mixture.
3. Mix till just combined.
4. Add in chocolate chips, cherries and walnut. Mix.
5. Spoon into lined muffin cups.
6. Bake for 25min or until cooked.

Banana Chocolate Chips Muffin


Ingredients:
Bananas (3-4 medium sized, mashed)
Sugar (1/2 cup)
Oil (1/3 cup)
Egg (1)
Plain Flour (1.5 cup)
Baking Powder (1tsp)
Baking Soda (1tsp)
Salt (1/2 tsp)
Chocolate chips (as much as you like??)

Preheat oven at 190C

Method:
1. Mix mashed bananas, sugar, oil and egg together. Set aside.
2. In another bowl, mix plain flour, baking powder, baking soda and salt evenly.
3. Pour the wet ingredients in 1 into the flour mixture and add in chocolate chips. Mix till combined.
4. Spoon into muffin cups and bake for 20-25min.

Strawberry-Lemon-Rosemary Muffins



Even if you don’t like the muffins, you’ll love the muffin cups. Haha…aren’t these lovely?
I was inspired to bake using the combo of strawberry, lemon and rosemary after reading dailydelicious’ blog. To me, it’s so English and it just makes me want to bake! I didn’t follow her recipe for the usual reason; I don’t have all the ingredients. ;p

The only disappointment was the rosemary. I thought the lovely smell would permeate my kitchen while the muffins were baking but I didn’t really smell anything. I guess I should add more of it next time, probably 1 tbsp instead of 1 tsp.


Ingredients:
Plain Flour (2 cups)
Baking Powder (3 tsp)
Salt (1/2 tsp)
Sugar (3/4 cup)
Egg (1)
Oil (1/4 cup)
Milk (1 cup)
Strawberries (1 cup or more, if you love the fruit)
Grated Lemon Rind (1 tbsp)
Fresh Rosemary (1 tsp-finely chopped)


Preheat oven at 190C


Method:
1. Mix flour, baking powder, salt and sugar in a bowl.
2. In another bowl, mix egg, milk, oil, rosemary and lemon rind.
3. Pour the wet ingredients into the dry ingredients.
4. Mix till combined.
5. Mix in the strawberries.
6. Spoon into the muffin cups and bake for 25min or until cooked.

Wheat Bran Orange Muffins

I ran out of bread for today’s breakfast, or that was what I thought last night. So, what’s good for breakfast and easy to make? Muffins, of course! My fridge is almost empty (OK, that’s just my interpretation when it’s running low on the things that I need) and the muffin recipe that I normally use calls for 1 cup of milk but there is no more milk at home. So, I simply replaced it with 1 cup of soy milk. There was still some soy milk powder left, so just mix that with some water and it works too!

Ingredients:
Wheat Bran (1/2 cup)
Plain Flour (1 ½ cup)
Sugar (3/4 cup)
Salt (1/2 tsp)
Baking Powder (3 tsp)
Egg (1)
Oil (1/4 cup)
Soy Milk (1 cup)
Grated Orange Rind (2 tbsp)
Vanilla Essence (1 tsp)

Preheat oven at 190C


Method:
1. Mix wheat bran, flour, sugar, salt and baking powder in a bowl.
2. In another bowl, mix egg, oil, milk, vanilla essence and orange rind.
3. Pour the wet mixture into the dry mixture. Mix till combined.
4. Spoon into muffin cups and bake for 25min or until cooked.

Egg-less Wheat Germ & Wheat Bran Mango Muffins



This is IT….the healthiest muffins I’ve ever baked. It has no egg but added with wheat germ and wheat bran. Check out the benefits for both wheat germ and wheat bran here:

I’ve always wanted to bake muffins without using egg not because I am a vegetarian (far from it ;p), but because egg is one of food to avoid if you have problems with cholesterol level. Since I omitted the egg, I added 2 more tbsp of yoghurt to the mixture but I think an extra 1 tbsp instead of 2 will do too.

The verdict? The muffins smells great when I took them out of the oven and the texture reminded me of whole wheat bread. I think it’s due to the wheat bran because I have added wheat germ before in muffins but it didn’t give the same texture as these. They’re also very moist (am sure, thanks to the yoghurt) and not too sweet. I don’t quite like the mangoes in the muffins though as it turned soft after baking. Probably, apples would be a better choice (if you do apples, make sure to add some cinnamon and nutmeg powder as these 2 spices combine so perfectly well with apples). Adding some nuts e.g. walnuts would be great too!

Oh, if you’re not a fan of whole wheat bread or anything healthy, you can skip this lest you curse me for wasting your time baking ;p


Ingredients:
Plain Flour (1 ½ cup)
Wheat Germ + Wheat Bran (1 cup)
Note: it’s up to you whether you want both in equal amounts or in different proportions
Salt (1/2 tsp)
Baking Powder (3 tsp)
Caster Sugar/ Brown Sugar (3/4 cup)
Plain Yoghurt (4 tbsp)
Milk (1 cup)
Oil (1/4 cup)


Preheat oven at 190C


Method:

1. Mix plain flour, wheat germ, wheat bran, salt and sugar well.
2. In another bowl, mix milk, yoghurt and oil.
3. Pour the wet ingredients into the dry mixture in no. 1.
4. Spoon into muffin cups/tray and bake for 30min or until cooked.

Black Sesame Muffins


I have 2 packets of black sesame that have been lying in the cupboard for some time. Since I don’t like to keep things for too long and I clear my stuff from time to time, it’s time to do something with it. It was Thursday and I asked my friend, Lynn what should I bake and she said “Make some healthy muffins.” There you go…the solution to my sesame seeds!

Sesame seeds are very rich in minerals such calcium, magnesium, iron and zinc, and to give it a more healthy feel, I added some wheat bran. These muffins sure made a good breakfast and you definitely can’t find it in bakeries! So, make your own :)


Ingredients:
Plain Flour (1 ½ cup)
Wheat Bran (1/2 cup)
Ground Toasted Black Sesame (1/2 cup or more if you like stronger sesame taste)
Baking Powder (3tsp)
Salt (1/2 tsp)
Sugar (3/4 cup)
Egg (1)
Yoghurt (4 tbsp)
Milk (1 cup)
Oil (1/4 cup)

Preheat oven at 190C


Method:
1. Sift plain flour and baking powder. Mix in wheat bran, black sesame, salt and sugar. Set aside.
2. In another bowl, mix well egg, yoghurt, oil and milk.
3. Pour the wet mixture into the dry mixture in no. 1. Mix till combined.
4. Spoon into muffin cups and bake for ~25min or until cooked.

Chocolate Muffins with Chocolate Chips



Made these for Carmen 2 weeks ago (er…yeah, I am really outdated in updating the blog). Her hubby thought I bought these from outside especially with this kind of packing.
Glad they both liked it :)
I used the muffin recipe that I’ve used countless times and just replace ½ cup of the flour with cocoa powder.


Ingredients:
Plain Flour (1 ½ cup)
Cocoa Powder (1/2 cup)
Baking Powder (3tsp)
Salt (1/2 tsp)
Sugar (3/4 cup)
Egg (1)
Yoghurt (2-3 tbsp)
Milk (1 cup)
Oil (1/4 cup)
Chocolate Chips (as much as you like)

Preheat oven at 190C

Method:
1. Sift plain flour, cocoa powder and baking powder. Mix in salt and sugar. Set aside.
2. In another bowl, mix well egg, yoghurt, oil and milk.
3. Pour the wet mixture into the dry mixture in no. 1. Mix till combined.
4. Mix in the chocolate chips.
5. Spoon into muffin cups and bake for ~25min or until cooked.

Peanut Chocolate Muffin


Another variation of muffin. If you don’t have cocoa powder, just put in some Milo/Ovaltine/Vico or any chocolate drink you have la…works fine. :)


Ingredients:
Plain Flour (1 ½ cup)
Baking Powder (3 tsp)
Salt (1/2 tsp)
Wheatgerm (1/4 cup)
Ground peanut (1/4 cup)
Cocoa Powder (4 tbsp)
Sugar (3/4 cup)
Egg (1)
Milk (1 cup)
Yoghurt (4 tbsp)
Oil (1/4 cup)


Preheat oven at 190C


Method:
1. Sift flour, baking powder and cocoa powder. Mix in salt, sugar, ground peanut and wheatgerm.
2. In a separate bowl, mix egg, milk, yoghurt and oil. Whisk lightly till combined.
3. Pour the wet mixture into the dry mixture in no. 1.
4. Mix till just combined.
5. Spoon into muffin cups and bake for 25min or till cooked.

Banana Muffins with Chocolate Chips and Raisins


I made these for my friends and they all liked it! YT said her daughter prefers it to the ones she made. Oops…

Initially, I didn't want to add any raisins as I was afraid it might be too sweet but at the request of my #1 Helpdesk, I added some. It turned out OK and I don't think it's too sweet; just right :)

Ingredients:
Bananas (4 medium size- mashed)
Sugar (1/2 cup) – I used brown sugar or I think it’s called “gula merah”
Egg (1)
Oil (1/3 cup)
Plain yoghurt (2 tbsp)
Baking soda (1 tsp)
Baking powder (1 tsp)
Salt (1/2 tsp)
Plain Flour (1 ½ cup)
Cinnamon powder (1/4 tsp)
Chocolate chips (handful)
Raisins (handful)

Preheat oven at 190C

Method:
1. Mix bananas, sugar, egg, oil and yoghurt together.
2. In another bowl, sift baking soda, baking powder, salt, flour and cinnamon powder.
3. Pour the wet ingredients in no.1 into the dry ingredients.
4. Mix in chocolate chips and raisins.
5. Spoon into muffin paper cups and bake for 20min.

By now, your kitchen would smell so nice and you just can’t wait to get a bite of that muffin! It’s moist even if you keep it for another day or two.

Wheatgerm and Pumpkin Seeds Muffins


I am finally back and have some free time to update this journal. Yeah, I have been pretty busy in the past 2 weeks attending my own wedding dinners ;p I am married (some of you may say, “Finally….”)! Haha….

Praise the Lord for all things went well and I am really grateful to all the wedding helpers, my 2 KL friends for going all the way to SG for my wedding, my sis who gave us a surprise photo slide show and those who made it for the dinner despite it being a held on a Friday.

Now, back to ,y fav topic; food and baking, of course! Amidst all the busyness with the wedding and coupled with my failing memory, I forgot Cindy’s birthday. Terrible me…
I passed her one of the muffins and was very glad that she loved it! Seems it’s better than the birthday cakes she had. Wow! That made my day :)


Ingredients:

Plain Flour (1 1/2 cups)
Wheatgerm (1/2 cup)
Baking Powder (3 tsp)
Salt (1/2 tsp)
Sugar (3/4 cup)
Yoghurt (2 tbsp)
Egg (1)
Milk (1 cup)
Oil (1/4 cup)
Pumpkin Seeds (didn’t measure this, I think I used a handful)
*I forgot to mention that I added a dash of cinnamon powder into the flour mixture.

Preheat oven at 190-200C


Method:
1. Mix flour, wheatgerm, baking powder, salt and sugar in a bowl. Set aside.
2. In a separate bowl, mix egg, yoghurt, milk and oil.
3. Pour this into the dry ingredients in no. 1.
4. Mix well. Add in pumpkin seeds and mix.
5. Pour into muffin tray/pan and bake for 20-25min.

Chocolate Banana Muffin


The whole house smells banana when I was baking these sinful muffins. I used the same banana muffin recipe but this time I added some chopped cooking chocolates into the muffin mix before baking them. I love these muffins! It’s so effortless to make and yet taste great and all your diet plan will be gone down into the drains when you smell them. Hahaha….

Banana Passionfruit Muffin


I went off early from the office yesterday since I started work real early and had the chance to join the housewives crowd in the wet market. Although we can get most of the foodstuff in the hypermarket, I still like buying from the wet market. It reminds me of my childhood when I used to pester my mum to let me follow her to the market. :)

So, I was strolling around the market and saw this auntie selling passion fruits. “Do you know how to eat this?” she asked. Er…actually I was thinking of using it to bake some muffins and it didn’t cross my mind at all that I want to eat it fresh like that. Haha…ah well, you’re supposed to cut the fruit into half and scoop the flesh if you want to eat it fresh or you can also make juice with it.
Anyway, I bought 3 and when I saw there still some bananas in the fridge, I thought I might as well combine them both! So, this is what you get; banana passion fruit muffins.
The passion fruit’s seeds gave it a crunchy bite and the 2 fruits made the muffins really flavorful! You might want to reduce the bananas as the taste easily overpowers the passion fruit.


Ingredients:
Plain Flour (2 cups)
Baking Powder (1 tsp)
Baking Soda (1 tsp)
Salt (1/2 tsp)
Egg (1)
Caster Sugar (2/3 cup)
Oil (1/3 cup)
Yoghurt (2 tbsp)
Banana- mashed (1-2pieces)
Passion fruit (3)

Preheat oven at 195-200C


Method:
1. Mix flour, baking powder, baking soda and salt together. Set aside.
2. Mix sugar, egg, oil, yoghurt, mashed banana and passion fruit until well combined.
3. Pour this mixture into the flour mixture.
4. Mix till just combined.
5. Bake for 25-30min.

Banana Muffins


This is VIP and the freshly baked muffin :)

Moist and full of flavor…this is how I’d describe these cute little banana muffins.

I kind of stumbled upon the recipe while looking for a banana muffin recipe but I made modifications to it by adding 2 tbsp of plain yoghurt and 1 tsp of cinnamon powder. The original recipe is from catcancook.com.

It’s super easy to make! Just mix everything together, bake for 20-25min or so and voila! You’ll get these wonderful muffins for tea time (I actually had one for supper ;p).
This one’s definitely for keep!

Muffin Variations

Variations of muffins using the same basic recipe. If you do not have much time to prepare, this is the recipe!
The original recipe is from kuali.com.
I've made some modifications to create different flavours.

Chocolate Peanut Muffin
Reduce flour and add same amount of peanut. Add in some chocolate powder.




Wheat germ Muffin with Cheese and Roasted Sunflower Seed
Reduce flour and add same amount of wheat germ, sprinkle cheese and sunflower seed onto muffins before baking.



Ingredients:
Plain Flour (2 cups)
Baking Powder (3 tsp)
Salt (1/2 tsp)
Castor Sugar (3/4 cup) –sometimes I use brown sugar depending what’s available ;p
Egg (1)
Milk (1 cup) – I’ve also tried it with yoghurt and soybean milk
Oil (1/4 cup)

Preheat oven at 200C.


Method:
1. Sift plain flour and baking powder together. Mix in salt.
2. In a bowl, beat egg and sugar. Mix with milk.
3. Pour this mixture into the dry ingredients. Mix in oil.
4. Fill muffins cups up to 2/3 full and bake for 25-30min or until cooked.

Orange Poppy Seed Muffin


This is a variation from one of the muffin recipes that I keep. I added yoghurt, poppyseed and also some toasted wheat germ for a little crunch ;p It's a little on the dry side (I think adding more yoghurt will help) and it's best eaten when it's warm :)


Ingredients:
Butter (1/3 cup)
Sugar (3/4 cup)
Salt (1/2 tsp)
Egg (1)
Plain Yoghurt (4 tbsp)
Orange Peel (chopped finely- 3tbsp)
Poppy Seed (2 ½ tbsp)
Toasted Wheat Germ (2 tbsp)
Plain Flour (1 ½ cup)
Baking Soda (1/2 tsp)
Baking Powder (1/2 tsp)

Preheat oven at 190C.


Method:
1. Beat butter, sugar, salt and egg till well combined.
2. Add yoghurt and orange peel.
3. Sift plain flour, baking soda and baking powder. Add in wheat germ and mix well.
4. Pour the dry ingredients into the wet mixture. Mix till just combined.
5. Fill muffin cups till 2/3 full and bake for 20min.

Corn and Raisin Muffin

I find these muffins a little too sweet, so might be better to reduce the sugar content next time. The corn gave these muffin a good aroma especially when they’re fresh out of the oven :)




Ingredients:
Flour (1 ½ cup)
Baking powder (1 tsp)
Baking soda (1 tsp)
Salt (1/2 tsp)
Sugar (3/4 cup)
Egg (1)
Butter (1/3 cup)
Sweet corn (4tbsp)
Raisin (3tbsp)

Preheat oven at 190C.


Method:
1. Beat butter, eggs, sugar and salt till light and creamy.
2. Mix in the corn and raisin.
3. Fold in flour, baking powder and baking soda (sift together first).
4. Scoop the mixture into muffin cups.
5. Bake for 20-25 min or until cooked.

Banana Muffins with Crumb Topping


Yup, yup….another baking session for me! I’ve always wanted to try muffins with crumb topping and since this recipe looks quite easy, I thought I’d give it a try. Turns out I don’t really like the topping as I find it too sweet. Well, the topping is made of butter, sugar and a little flour, but I just didn’t expect it to be that sweet.

Overall, this muffin is quite good and easy to make (the finished product might be deceiving and made people think you bought them ;p). Gave one to my col and here’s her detailed comment:

Texture – 95
Color – 90
Decorative – 85
Overall 90 marks…only 1 comment, I think you put too much “bicarbonate/ yeast” .. or banana essence ?

Actually there was no banana essence added, only bananas! But the recipe calls for both baking powder and soda bicarbonate, so that could be the reason for the comment.

Chocolate Chips Muffin




VIP is just back from the States this Tuesday and bought some cute baking moulds for me. See the heart-shaped ones? I just love them and because they're non-stick ones, the cake falls off easily after baking. Anyway, VIP has not tried any of the muffins/pie which I made last week so I baked some chocolate chips muffins for him.

I adopted this recipe from Peony. She used this to make blueberries muffins but I've done blueberries before, so I just put chocolate chips instead of the berries. Apart from that, I added 1 tsp of vanilla essense too. Here's the link to her original recipe:

The muffins are definitely a healthier version since it uses corn oil instead of butter but we all know better than if it's healthy, it doesn't taste as nice (compared to the more fattening version ;p). I find these muffins a little dry compared to the ones I made using butter.
Nevertheless, they look lovely in golden brown :)
