Fried Rice with Chinese Sausages

If you realise, I have been dishing out mostly one dish meal these days. Yeah, time is a constraint since I have a small kitchen and apartment and even the slightest noise will wake the baby, which means I can only start cooking after the little empress wakes up from her nap. The problem is, once she wakes up, she expects some entertainment and I can't leave her alone in her playpen for long. So, that's why we have all these quick to cook one dish meal :)

In case you wonder why the colour of the rice looks a but reddish, that's because I've always use brown + red rice :) If I cook white rice, I think it would be considered an exception ;p

Ingredients:
Rice (cooked and let cool at room temp)
Garlic
Carrot
Broccoli
Chinese Sausage
Egg
Oil
Salt
Light Soy Sauce
Dark Soy Sauce
Pepper
Water (boiled)

Method:
1. Heat some oil and saute garlic.
2. Add in chinese sausages and stir fry till the edges of the sausages start to brown a little.
3. Pour in carrot and broccoli and do a quick stir fry.
4. Add in beaten egg and let it cook before you continue to stir fry.
5. Add a little salt and pepper to taste.
6. Pour in the rice and add some light and dark soy sauce. Mix well.
7. Add a little water if it's too dry.
8. Stir fry for 1/2min and dish up.

Fried Rice with Fresh Corn

Here's another simple meal I cooked recently. It taste really good all because of the fresh corn!!! I don't know what you call that corn with 2 colours; white and yellow kernels but it's the more expensive type. It's not because I wanted to buy this but the seller ran out of the normal type, so I had to take this one. Anyway, it's very juicy and sweet, so no regrets.

Ingredients:
Cooked Rice
Carrot (diced)
Broccoli (cut into small pieces)
Fresh Corn
Dried Shrimps (soaked and chopped)
Garlic (chopped)
Shallots (sliced)
Dark Soy Sauce
Light Soy Sauce
Oil
Water-boiled

Method:
1. Heat oil in wok and saute garlic and shallots till fragrant.
2. Add in dried shrimps and stir fry till fragrant.
3. Add in carrot, broccoli and corn.
4. Season with light soy sauce.
5. Pour in rice and mix well.
6. Add in dark soy sauce and mix well.
7. Stir fry for 3-4min, adding water when it gets too dry.
8. Cook until corn is cooked (try it!) and add more light soy sauce to taste.
9. Serve hot.

Fishy Fried Rice

Nope...no fish in the fried rice ;p This is today's lunch; fried fish and simple fried rice. I've been eating out for almost the past 2 weeks and I miss simple home cooked food. Today's meal took minimal effort but we had a very satisfying lunch. Fried rice is not oily like those sold outside plus I put in lots of vegetables.

The fried fish is idiot-proof. Just clean the fish, rub a little salt on both sides and leave it for 10min or so. Then, fry it till golden brown on both sides. Use low heat especially if it's a big fish or the meat is thick to ensure it's fully cooked on the inside too.

Pumpkin Rice

If you’ve never had pumpkin before, you should really give it a chance. I don’t recall my mum cooking any pumpkin dish until I was almost 12 or older. In the beginning, I hated it because I thought it’s like eating savoury sweet potato. I don’t really remember how I grew to love it but it was probably the time when I tasted pumpkin rice which my colleague brought into the office for her breakfast. Since then, I’ve decided I should give this squash a second chance and knowing how much nutrient you get from it makes it easier. It’s full of anti-oxidants, beta carotene (which converts to Vitamin A), niacin, vitamin E, calcium and iron!

Well, the next time you’re feeling tired to prepare a 3-4 dishes meal, try this one pot meal. The pumpkin brings subtle sweetness to the rice and blends in really well with dried shrimps and mushrooms (just like yam). In a way, this is like an adaptation from yam rice but I added some carrot as I love to have more vegetables in my meal.

Ingredients:
Rice (I used brown rice)
Pumpkin (cut into cubes)
Carrot
Dried Shrimps (soaked and chopped)
Shallots
Dried Mushroom (soaked and cut into small pieces)
Bean Paste (~1 tbsp)
Dark Soy Sauce
Oyster Sauce
Salt
Sugar
Pepper
Oil
Water

Method:
1. Heat some oil and saute shallots.
2. Add in dried shrimps and stir fry till fragrant.
3. Add in mushroom and carrot. Stir fry for 1 min.
4. Add in pumpkin.
5. Season with bean paste, oyster sauce, sugar, dark soy sauce and pepper.
6. Pour in the rice and mix well. Add in enough water (this really requires some agak-agak skill because you’ll need to add a little extra water than you usually need to cook the rice).
7. Season with a little salt.
8. Transfer everything to the rice cooker and cook rice as usual.

Steamed Glutinous Rice

Can someone tell me how in the world did those rice bugs come about and managed to get into my packet of glutinous rice that was not even opened yet??? It really puzzled me. Anyway, I had to salvage the packet of rice or it will be such a waste to throw everything away (mum's story of starving kids come to mind). Moreover, you won’t die from eating rice attacked by rice bugs (I don’t know what you call them but I call the monster rice bugs) provided you clean the rice properly.

So, what to do with the glutinous rice? Loh mai kai? Hor yip fun (where to find the hor yip)?? OK la, don’t care. Just cook something out of it and since I am too lazy to arrange pieces of chicken and mushroom in bowls like what you get in loh mai kai, I’ll just do my own version of glutinous rice.
This is so delicious!!!! (Pls wipe off your saliva…) I am really happy it turned out so well since it’s a first attempt. Of course, hubby is delighted to get to eat some unhealthy stuff….hahaha.

Ingredients:
Glutinous Rice (soaked overnight)
Ginger (ground or chopped finely)
Garlic
Shallots
Dried Shrimps (soaked and chopped)
Dried Mushroom (soaked till soft and cut into small pieces)
Chicken Meat (cut into small pieces)
Light Soy Sauce
Dark Soy Sauce
Salt
Sugar
Pepper
Oyster Sauce
Sesame Oil
Cooking Wine
Oil

Method:
1. Marinate chicken with sesame oil, light soy sauce and pepper for at least 30min.
2. Heat some oil in a wok and sauté garlic, ginger and shallots till fragrant.
3. Add in dried shrimps and mushroom. Stir fry for 2-3min.
4. Add in chicken meat and stir fry for 1min.
5. Season with oyster sauce, salt, sugar, cooking wine and pepper.
6. Mix in glutinous rice.
7. Season with dark soy sauce and light soy sauce. You can add other seasoning such as salt, sugar and oyster sauce – just season until you’re satisfied with the taste.
Pls try the taste now or it will be too late when we start to steam the rice.
8. Add some water. Stir and cook till rice soaks up the water. (You may not want to pour in one whole bowl of water if unsure, it’s better to add the water as you cook the rice. Keep on stirring s the rice won’t stick to the wok and use low heat).
9. Scoop the rice mixture into small bowls.
10. Steam it for 40-45min or until the rice is cooked.

It’s yummy with or without chili sauce. :)

Baked Rice (Free Style)

OK, free style means 'cincai' cook one la ;p No recipe....just agak-agak.

I don't remember what gives me the inspiration to cook this but I think the taste is not too bad for a first attempt. The only thing I should improve from this version is make sure the rice is not too wet. Other than that, it's kind of nice and would be even nicer if you can take in a more fattening version by topping it with cheese before baking ;p
The seaweed absolutely enhanced the taste of this dish!

Ingredients:
Rice (cooked)
Corn (steamed)
Carrot (diced)
Garlic (chopped)
Chicken meat (remove bones and cut into small pieces)
Pumpkin (cut into small cubes)
Tomatoes (cut into small pieces)
Seaweed sheets (tear into bite size pieces)
Cooking wine
Light Soy Sauce
Sugar
Salt
Sugar
Pepper
Tomato Sauce
Chili Sauce
Oil
Water

Preheat oven at 180C.

Method:
1. Marinate chicken meat with cooking wine, light soy sauce and sugar. Set aside.
2. Heat a little oil and saute garlic.
3. Add in carrot and pumpkin. Stir fry for 2-3min.
4. Add in chicken meat.
5. Season with salt and pepper.
6. Add water and cook till pumpkin is soft. Mix in tomatoes and dish up.
7. Grease a baking dish with a little oil.
8. Fill the baking dish with rice.
9. Pour mixture in no. 6 into the rice and mix.
10. In another bowl, mix tomato and chili sauce together, then stir the mixture into the rice.
11. Cover the baking dish with an aluminum foil.
12. Bake for 20min.
