Steamed Tofu with Small Ikan Bilis


Here's a simple and yet tasty tofu. I think I've put in a little too much ikan bilis ;p OK, next time I shouldn't be so greedy.

Ingredients:
Tofu
Small ikan bilis (I don't know what you actually call this..)
Oil
Light Soy Sauce


Method:
1. Steam tofu. You can do this using a rice cooker while cooking rice.
2. Heat a little oil in wok and fry small ikan bilis till it turns light golden. Dish up.
3. Drizzle some light soy sauce onto the cooked tofu.
4. Sprinkle ikan bilis on top. Serve hot.

Steamed Glutinous Rice


Can someone tell me how in the world did those rice bugs come about and managed to get into my packet of glutinous rice that was not even opened yet??? It really puzzled me. Anyway, I had to salvage the packet of rice or it will be such a waste to throw everything away (mum's story of starving kids come to mind). Moreover, you won’t die from eating rice attacked by rice bugs (I don’t know what you call them but I call the monster rice bugs) provided you clean the rice properly.


So, what to do with the glutinous rice? Loh mai kai? Hor yip fun (where to find the hor yip)?? OK la, don’t care. Just cook something out of it and since I am too lazy to arrange pieces of chicken and mushroom in bowls like what you get in loh mai kai, I’ll just do my own version of glutinous rice.
This is so delicious!!!! (Pls wipe off your saliva…) I am really happy it turned out so well since it’s a first attempt. Of course, hubby is delighted to get to eat some unhealthy stuff….hahaha.


Ingredients:
Glutinous Rice (soaked overnight)
Ginger (ground or chopped finely)
Garlic
Shallots
Dried Shrimps (soaked and chopped)
Dried Mushroom (soaked till soft and cut into small pieces)
Chicken Meat (cut into small pieces)
Light Soy Sauce
Dark Soy Sauce
Salt
Sugar
Pepper
Oyster Sauce
Sesame Oil
Cooking Wine
Oil


Method:
1. Marinate chicken with sesame oil, light soy sauce and pepper for at least 30min.
2. Heat some oil in a wok and sauté garlic, ginger and shallots till fragrant.
3. Add in dried shrimps and mushroom. Stir fry for 2-3min.
4. Add in chicken meat and stir fry for 1min.
5. Season with oyster sauce, salt, sugar, cooking wine and pepper.
6. Mix in glutinous rice.
7. Season with dark soy sauce and light soy sauce. You can add other seasoning such as salt, sugar and oyster sauce – just season until you’re satisfied with the taste.
Pls try the taste now or it will be too late when we start to steam the rice.
8. Add some water. Stir and cook till rice soaks up the water. (You may not want to pour in one whole bowl of water if unsure, it’s better to add the water as you cook the rice. Keep on stirring s the rice won’t stick to the wok and use low heat).
9. Scoop the rice mixture into small bowls.
10. Steam it for 40-45min or until the rice is cooked.

It’s yummy with or without chili sauce. :)

Steamed Minced Meat with Tung Choi


This is a traditional dish that my mum cooked quite often when we were small. I like the tung choi although it can be very salty if you add in too much of it and didn’t soak it in water first. It goes well with porridge and white rice. To me, this is one of those comfort food that you cook when you miss home or your childhood.


Ingredients:
Minced Pork (I used lean meat but it tastes better if you use meat with some fat)
Tung Choi (a kind of preserved vegetables)
Sesame Oil
Pepper
Light Soy Sauce


Method:
1. Clean the tung choi a few times – it tends to have some sand in it.
2. Soak the tung choi for at least 30min, otherwise it will be very salty.
3. Add some sesame oil, pepper and light soy sauce into the minced meat and let it marinate for ~30min.
4. Squeeze excess water from tung choi and mix it into the minced meat.
5. Steam until cooked. I steamed it while cooking rice and it’s done when rice is cooked.

Dinner 13May09 (Steamed Fish in Light Soy Sauce & Stir Fried Winged Bean)

I cooked dinner again today and am glad that I have the time to do it. As usual, I don’t cook complicated stuff especially during weekdays. Dinner for today includes steamed sutchi fillet in light soy sauce (very easy and yummy!), stir fried winged beans (one of my fav dish) with dried shrimp and chili and the idiot-proof onion omelet (since it’s idiot-proof, I am not going to jot down the recipe ;p).


Steamed Sutchi Fish Fillet

Stir Fried Winged Beans with Dried Shrimps and Chili

Steamed Sutchi Fillet in Light Soy Sauce
Ingredients:
Sutchi Fish Fillet
Ginger (sliced)
Light Soy Sauce
Spring Onion (take the white part near the root and cut into 2cm length)
Parsley
Oil
Sesame Oil

Method:
1. Steam fish fillet with ginger (I placed it on a steamer in the rice cooker while cooking rice- save time ma…). Drain any liquid from the steamed fish. Leave aside.
2. Heat a little oil in a wok and sauté the spring onion until it turns a little soft.
3. Pour in light soy sauce. You can add a little water if you do not want it to be too salty.
4. Cook for 1min then dish up and pour sauce over the steamed fish.
5. Drizzle a little sesame oil over it and garnish with a little parsley. Serve hot!


Stir Fried Winged Beans with Dried Shrimps and Chili
Ingredients:
Winged Beans
Garlic
Dried Shrimps
Chili
Salt
Water
Oil

Method:
1. Use a blender or food processor and blend together garlic, chili and dried shrimps.
2. Heat oil and sauté the blended ingredients until fragrant. Add a little bit of salt.
3. Add in winged beans and stir fry over medium to high heat for 1-2min.
4. Add a little water and stir fry till the water dries up a little.
5. Dish up and serve with rice.

Steamed Fish with Preserved Bean Paste



This is THE dish for VIP. He can finish the whole fish (if there’s 2, he can finish all as well!) by himself. Anyway, this is very easy to do and if you like steamed fish the traditional way (yet not too complicated), try this.


Ingredients:
Fish (rub with a little salt and pepper and leave it for 30min)
Bean paste
Ginger (cut into thin strips)
Garlic (chopped)
Pepper
Soya sauce
Water
Oil or sesame oil


Method:
1. Clean the fish with some water to wash away the salt.
2. Put half of the some garlic, ginger and bean paste on a plate.
3. Place fish over the ingredients in #2.
4. Sprinkle the remaining garlic, bean paste and ginger over the fish.
5. Mix soya sauce, a little oil and water in a bowl. Pour the mixture over the fish.
6. Steam till cooked.

I usually place it on a steamer while cooking the rice. Yeah….the lazy way ;p

Steamed Tofu

One of the dishes for dinner this week. Quick and easy!


Ingredients:
Tofu
Soya sauce
Shallots (cut into thin slices)
Oil


Method:
1. Put a tbsp of soya sauce onto the tofu.
2. Steam tofu for 5-6min. You can also use the steamer while cooking rice. This way, the tofu will be cooked when the rice is done.
3. Heat wok with some oil and fry shallots till golden brown.
4. Dish up and sprinkle on top of the steamed tofu.
