Quick Chicken and Mushroom Rice (One Pot)

I usually do this whenever I feel lazy to cook a full meal which consists of rice, vege, meat and soup. This is fast, easy and tasty. :)



Ingredients:
Chicken
Ginger
Black Fungus (soaked and cut into pieces)
Mushroom (soaked till soft and cut into pieces)
Dark Soy Sauce
Light Soy Sauce
Pepper
Salt
Chinese Cooking Wine
Water
Rice
Oil


Method:
1. Wash rice and set aside.
2. Heat oil in wok and saute ginger till fragrant.
3. Add in mushroom and stir fry till it dries up a little.
4. Add in chicken and stir fry till it looks cooked on the surface.
5. Add salt, pepper, cooking wine, dark and light soy sauce. Mix well.
6. Pour in black fungus and stir fry for another min.
7. Add in rice and mix well. Add more seasoning to taste.
8. Dish up and pour into the rice cooker.
9. Add water and cook rice as usual.


Fried Chicken (Mum's Recipe)

This is how my mum used to cook her fried chicken for us when we were kids. Nowadays, no more fried chicken since she is on a healthier diet and we also don't go back often, so she doesn't cook this anymore. It's a very simple recipe but make sure you marinate it at least 2 hours and it's best if you can marinate it overnight.



Ingredients:
Chicken (medium-size pieces)
Salt
Pepper
Five Spice Powder
Flour
Egg White (beaten - 1 or 2 is sufficient)
Oil


Method:
1. Marinate chicken with salt, pepper and five spice powder for at least 2 hours.
2. Heat wok and pour in enough oil for deep frying.
3. When the oil is hot, dip the chicken into egg white and then cover with flour and fry it till golden brown. Use medium heat to ensure chicken is fully cooked.

Chicken with Preserved Black Beans (Tau See)



Ingredients:
Chicken (cut into medium sized pieces)
Onion
Garlic
Ginger
Preserved Black Beans (Tau See)
Salt
Water
Oil


Method:
1. Heat oil and saute garlic, ginger and onion.
2. Add in tau see and stir fry till fragrant.
3. Add in chicken and stir fry for 1-2min.
4. Season with a little salt (do not add too much as tau see is salty).
5. Pour in some water and cook till chicken is tender.
6. Serve with rice.

Oyster Sauce Chicken

Hubby just came back from biz trip yesterday, so I wanted to cook dinner for him today :) I really didn't know what to do with the chicken. Somehow suddenly osyter sauce came to my mind. So, oyster chicken it would be :) I am glad he loves it and this is definitely an easy one to do.




Ingredients:
Chicken
Button Mushroom (optional)
Ginger (a few slices)
Onion
Spring Onion
Light Soy Sauce
Oyster Sauce
Sesame Oil
Salt
Oil
Water


Method:
1. Marinate chicken with light soy sauce, sesame oil and oyster sauce for at least 30min.
2. Heat some oil and saute ginger and onion until fragrant.
3. Add in some of the spring onion (the thicker white parts). Stir fry for 1min.
4. Add in button mushroom and chicken.
5. Stir fry until chicken looks cooked from the ouside.
6. Season with a little salt and oyster sauce.
7. Add water and cook till it simmers. Continue cooking until chicken is cooked.
8. Add the remaining spring onion 1min before you dish up.

A Simple Dinner

I am now on a "restricted" mode when it comes to doing any housework, so most of the meals that I cook now are really simple and almost effortless dishes. We had steamed chicken with ginger and stir fried vegetables for dinner. This is the first time hubby cooked a vege dish (well, the other dish he did was onion omelet long time ago ;p). It was fun to cook together and I hope we can do this more often :)




Steamed Chicken with Ginger

Ingredients:
Chicken (cut into medium size pieces)
Ginger (cut into thin strips - I prefer young ginger)
Garlic (chopped)
Salt
Sesame Oil

Method:
1. Rub the chicken with a little salt.
2. Arrange the chicken on a plate and sprinkle garlic and ginger over it.
3. Drizzle about 1 tbsp of sesame oil over it.
4. Steam till cooked (I put it on a rice cooker steamer and cook it together with the rice).





Stir Fried Yau Mak Vegetables

Ingredients:
Yau Mak
Garlic (chopped)
Salt
Oyster Sauce
Oil
Water

Method:
1. Heat a little oil in a wok and saute garlic till fragrant.
2. Add in the vegetables and stir fry for a while.
3. Season with oyster sauce and a little salt to taste.
4. Stir to mix well. Add a little water if too dry.
5. Dish up when it boils.

Chicken Stew with Potatoes and Carrot



After the muffin experiment with rosemary, I still have some of the herb in the fridge and so tried to cook it with this chicken dish. I simply love the aroma of the rosemary which makes this comfort food even more heart warming (OK, depends who you’re going to eat with ;p). Herbs are really amazing plants. They come in “small packages”, as in most have tiny leaves, but a little bit of them bring out so much flavor in a dish. Rosemary keeps real well in the fridge and after this chicken stew, I still have some of it. Hhmm… I think I am going to experiment it with fish next.


Ingredients:
Chicken Meat
Carrot
Potatoes
Shallots
Garlic
Fresh Rosemary
Salt
Sugar
Pepper
Cooking Wine
Dark Soy Sauce
Oil
Water
Corn Flour (optional)

Method:
1. Marinate chicken meat with salt, sugar, pepper and cooking wine 2-3 hours (I marinated it overnight).
2. Heat some oil and saute garlic and shallots until fragrant.
3. Add in potatoes and stir fry for ~2min.
4. Add in carrot and continue to stir fry for another 1min.
5. Add in chicken meat (pour in marinade as well).
6. Season with dark soy sauce, salt and sugar.
7. Add water and cook with medium heat till it simmers.
8. Then, switch to low heat and cook till potatoes are soft.
9. Add in rosemary and cook for another minute.
10. Serve with rice.

Note: If you want to thicken the gravy, just mix a little corn flour with water before adding in the rosemary. Cook till it simmers.

Stir Fried Chicken with Ginger and Spring Onion

I cooked these for lunch in church 2 weeks ago; chicken with ginger and spring onion and stir fried cabbage with carrot. Just simple food, the kind I usually cook for our dinner. Nicholas had lots of the cabbage and he ate it as if he was eating salad although it’s meant to go with rice. I was glad that he enjoyed it and who says we had to force kids to eat vege? ;p

The chicken is one of my favourite dishes as I love anything with lots of ginger and spring onion. :)


Ingredients:

Chicken Meat (de-boned)
Cooking Wine
Sugar
Salt
Pepper
Light Soy Sauce
Sesame Oil
Ginger
Garlic
Spring Onion
Oyster Sauce
Oil
Water
Corn Flour (optional)


Method:
1. Marinate chicken meat with cooking wine, salt, sugar, pepper, light soy sauce and sesame oil for 1 hour or so.
2. Heat some oil in a wok and saute the garlic and ginger until fragrant.
3. Add in some spring onion (the harder, whitish part nearer to the root) and stir fry till fragrant.
4. Put in the chicken and stir fry for 1min.
5. Season with a little bit of oyster sauce, salt and sugar.
6. Add some water and cook till it simmers.
7. Add in the rest of the spring onion and cook for another minute.
8. Dish up and serve hot.

Note: If you wish to thicken the sauce, mix some corn flour with water and pour it into the mixture (when you add the rest of the spring onion). Cook till it simmers.

Stir Fried Ginger Chicken

I think this can qualify as one of those confinement dishes...;p It’s just ginger, chicken and some flavoring. Maybe I’ll make sandwiches with these too when I am bored of the usual tuna sandwich.


Ingredients:
Chicken Meat (de-boned and cut into small/bite size pieces)
Ginger (shred finely)
Dark Soy Sauce
Light Soy Sauce
Sesame Oil
Pepper
Sugar
Oil
Water
Corn Flour (optional- to thicken sauce)


Method:
1. Marinate chicken with dark and light soy sauce, sugar, pepper and sesame oil for at least 30min.
2. Heat some oil in a wok and stir fry the ginger till fragrant.
3. Add in chicken meat (drain it first and leave leftover marinate in bowl).
4. Stir fry for 1min.
5. Add some water to the leftover marinate, mix it with a little corn flour and pour over chicken meat.
6. Cook till sauce thickens/dry.

Mine looks dry as I didn’t add a lot of water to it plus I cut the chicken in small pieces so I don’t want to overcook it. I just did a quick stir fry and it was done.

It’s delicious with white rice or porridge.

Chicken & Black Fungus in Spicy Dark Soy Sauce


I have a few outdated posts since last week and yet the lazy worm has been with me for some time, so I’m only updating this now. ;p
This is my mum’s dish; it’s something that I learnt from her by seeing how she cooked this although hers is a ‘sotong” version but I used chicken for a lower cholesterol version. Although the meat is the main thing is in this, I love the black fungus most! This recipe uses the thin black fungus. I think it works well for me because my hubby would be happy finishing the meat while I get the black fungus and onions (yeah, I love onions too!).


Ingredients:
Chicken Meat
Black Fungus (soaked in hot water until soft, then cut into bite size)
Dried Chili (soaked in hot water, then cut into 1-2cm in length)
Onion (cut into wedges)
Ginger (2-3 slices)
Spring Onions (cut into 2cm in length)
Dark Soy Sauce
Light Soy Sauce
Sesame Oil
Chinese Cooking Wine
Sugar
Salt
Oil
Corn Flour
Water


Method:
1. Marinate chicken meat with dark and light soy sauce, sesame oil and cooking wine for at least 30min. Set aside.
2. Heat oil in wok and sauté the ginger till fragrant.
3. Add onions and stir fry for 1min.
4. Add in dried chili and spring onion (pick only the hard/whitish part and leave the remaining for later use). Do a quick stir fry.
5. Put in black fungus and stir fry for 1min.
6. Add in chicken meat.
7. Season with salt, sugar and add more dark soy sauce if you want it darker.
8. Pour in some water and let it simmer till it boils.
9. Put in the remaining spring onion.
10. Mix corn flour with water and pour this mixture over to thicken the sauce.
11. Dish up when it boils and sauce thickens.
12. Serve with rice. Yummy! Very appetizing….
Note: For added flavor, add some oyster sauce as part of the seasoning.

Dinner 15May09 (Stir Fried Cabbage & Carrot with Egg, Turmeric Chicken and Beef in Black Pepper Sauce)

Yay!!! It’s Friday and to celebrate the coming weekend, what better to do than cook dinner! Not like there is anything special to celebrate, but I’d always welcome the weekend since it’s a time of rest. So, here's what we had for dinner and this time I tried cooking beef. I think I've overcooked it a little. Hhmm...don't have much experience in the beef department ;p



Stir Fried Cabbage and Carrot with Egg

Turmeric Chicken

Stir Fried Beef in Black Pepper Sauce

Stir Fried Cabbage and Carrot with Egg
Ingredients:

Cabbage
Carrot
Garlic
Egg (beat with some pepper)
Salt
Oyster Sauce
Oil


Method:
1. Heat oil and sauté garlic for 1min.
2. Add in cabbage and carrot. Stir fry for 1min.
3. Season with some oyster sauce and salt.
4. Pour in the beaten egg. Let the egg cook for a while before continue to stir fry for another 1min.
5. Once the egg is cooked, dish up.


Turmeric Chicken
Ingredients:
Chicken Meat
Garlic
Ginger
Sesame Oil
Salt
Sugar
Turmeric Powder
Light Soy Sauce
Water Oil

Method:
1. Marinate chicken with turmeric powder, light soy sauce, sesame oil and salt for ~30min.
2. Heat oil and sauté garlic and ginger till ginger turns a little crispy.
3. Add in the marinated chicken and stir fry for 1-2min.
4. Pour in some water and let it simmer for a while.
5. Season with salt and sugar. Cook till chicken is tender/cooked.
6. Serve with rice.

Stir Fried Beef Slices in Black Pepper Sauce
Ingredients:
Beef Slices
Green Bell Pepper
Onion
Ginger
Salt
Black Pepper Sauce (mix with some water)
Water
Oil

Method:
1. Heat oil and sauté ginger for 1min.
2. Add in onion and bell pepper. Stir fry for 1min.
3. Add in beef slices and black pepper sauce and salt.
4. Do a quick stir fry and it’s done.

Stir Fried Chicken with Dried Chili (Gong Bou Gai Ting)

This is my version of "gong bou gai ting" since I didn't add cashew nuts and spring onions which is common for this dish. I remembered learning this almost 10 years ago in a cooking class but have not really cooked it since then ;p So, I don't really remember the exact ingredients but agak-agak la. VIP said taste good wor....so, OK la ;p



Ingredients:
Chicken Meat
Onion
Garlic
Ginger
Dried Chili (soaked in hot water, then cut into 2cm length)
Chinese Cooking Wine
Dark Soy Sauce
Salt
Sugar
Pepper
Corn Flour
Oil
Water


Method:
1. Marinate chicken with dark soy sauce, sugar, salt, corn flour, pepper and cooking wine for at least 30min.
2. Heat oil and sauté garlic and ginger.
3. Add in onion and dried chili. Stir fry till onion is soft.
4. Add in chicken meat and stir fry for 1-2min.
5. Pour in some water and let it simmer until chicken is cooked.
6. Thicken the gravy with mixture of corn flour and water.
7. When it boils, dish up and serve hot with rice.

Chicken & Mushroom in Dark Soy Sauce

Tonight's dinner consist of a vegetables dish, chicken herbal soup and this yummy chicken & mushroom in dark soy sauce.

Ingredients:
Chicken (marinate with light and dark soy sauce, pepper, sesame oil and sugar)
Chinese Mushroom (soaked till soft)
Garlic
Shallots
Salt
Sugar
Dark Soy Sauce
Cooking Wine
Corn Flour
Oil
Water



Method:
1. Heat oil and sauté garlic and shallots till you can smell the aroma.
2. Add in mushrooms and stir fry for 1min.
3. Pour in the chicken. Stir fry for 1-2min.
4. Season with dark soy sauce, salt, sugar and cooking wine. Mix well.
5. Add water and cook till it boils.
6. In a bowl, mix corn flour with a little water. Add this into the cooking to thicken the sauce.
7. Once it boils and sauce thickens, dish up and serve with rice.

Stir Fried Chicken with Bell Peppers & Mushroom

Time to go back to some Chinese stir fry :)
I didn’t know what to do with the chicken meat I’ve bought but since I got to include some meat in a meal for VIP, I just stir fried it with some bell peppers and button mushroom. I think the taste would be better if I had added some Chinese cooking wine.



Ingredients:
Chicken meat (marinated with some light soy sauce & cooking wine)
Bell Peppers –red and green (cut into bite size)
Button Mushroom
Garlic (chopped)
Salt
Black Pepper
Oil
Corn Flour
Water


Method:
1. Heat oil and saute garlic.
2. Add in bell peppers and button mushroom and stir fry for a while.
3. Add in chicken and stir fry for 1-2min.
4. Season with salt and black pepper.
5. Add water and let it simmer for 1min.
6. Thicken sauce with some corn flour mixed with water.
7. Serve with rice.

Chicken and Wood Fungus in Dark Soy Sauce



Ingredients:
Chicken (cut into medium or bite sized pieces)
Wood fungus (soaked in hot water till soft and cut into bite size pieces)
Dark soy sauce
Light soy sauce
Pepper
Sugar
Salt
Ginger (3-4 pieces)
Garlic (crushed lightly)
Oil
Water
Corn flour


Method:
1. Marinate chicken with light and dark soy sauce, pepper and sugar for 1 hour.
2. Heat oil in a wok and sauté garlic and ginger for 1-2min.
3. Add in chicken and sit fry 2-3min.
4. Put in wood fungus and mix well.
5. Add a little salt.
6. Put some water and cook till it boils. Continue to cook with low heat for ~10-15min.
7. In a bowl, mix a little corn flour with water.
8. Pour this mixture and cook till sauce thickens.

Chicken and Potato Stew

I am trying to do most of the cooking with the slow cooker nowadays to save time ;p
The slow cooker allows you to just dump everything inside and cook. By the time you wake up the next morning, it's ready. This is one of those trial and error dish. Tastes quite good but I think can be improved with some cloves and dark soya sauce. :)


Ingredients:
Chicken (remove skin, cut into large pieces)
Cinnamon stick (1-2 will do)
Star anise (2-3 pieces)
Garlic (crushed)
Soya sauce (mix with some water)
Salt
Corn flour (mix with a little water)
*I ran out of dark soya sauce but if you have, add a little dark soya sauce would be nice.


Method:
1. Put all the ingredients into the slow cooker and cook over low heat for 7-8hours.
2. Season with some salt.
3. If you would like the gravy to be thicker, add in a little corn flour mixture and cook till it boils before serving.

Marmite Chicken


Anyone out there likes Marmite chicken? We recently went dinner with our church pastor and some friends and all of us just loved this dish. So, the next thing I did was to search for its recipe. Hehe….and ta-da…here’s a simplified version of the original recipe.


Ingredients:
Chicken (cut into bite size)
Pepper
Soya Sauce
Corn Flour
Marmite Sauce
Honey
Shallots
Oil


Method:

1. Marinate chicken with pepper and soya sauce for 1hr.
2. Heat oil and fry the chicken. Set aside.
3. Stir fry shallots till fragrant.
4. In a bowl, mix honey, pepper, Marmite sauce, water and corn flour. Pour mixture into the wok.
5. Put in the chicken and cook till sauce thickens and it’s ready.

Stir Fried Chicken with Mixed Vegetables

Ingredients:
Carrot (cut into thin slices)
Young corn (cut into slices)
Chicken (de-boned and cut into bite size)
Onions (diced)
Button mushroom (cut into slices)
Pepper
Soya sauce
Oil
Oyster sauce
Chinese cooking wine
Corn flour
Water


Method:
1. Marinate chicken with soya sauce and pepper for at least 30min.
2. Heat oil in a wok and sauté the onions till fragrant.
3. Add in carrot, corn and button mushrooms. Stir fry with a little salt, Chinese cooking wine and oyster sauce for 2-3min.
4. Add in chicken meat and mix well.
5. Add in some water and cook till it boils over medium-low heat.
6. In a bowl, mix a little corn flour with water and pour this mixture into the wok.
7. Cook till gravy thickens and it’s ready to be served.
