Apple Walnut Cake

Have been really busy and only had the time to try out something new yesterday. Well, I sometimes bake to de-stress, so I think it has been a good baking session last night :)

The original recipe is from Amy Beh in kuali.com. I have modified it a little bit by reducing the amount of sugar and butter (2 fattening ingredients ;p).

This cake tastes better 1 day after baking, so you can always bake it a day before. It’s also very moist and I love the cinnamon taste in it.



Ingredients:
Plain flour (125gm)
Self Raising Flour (75gm)
Cinnamon Powder (1 ½ tsp)
Butter (140gm)
Brown Sugar (220gm)
Vanilla Essence (1 tsp)
Egg (3)
Apple (2 big ones – shredded or cut into very small pieces)
Walnut (80gm)
Raisin (I didn’t measure, just use up whatever’s left)
Oil

Preheat oven at 180C.


Method:
1. Sift plain flour, self raising flour and cinnamon powder. Leave aside.
2. Cream butter and brown sugar till combined.
3. Mix in vanilla essence.
4. Add in egg one by one and beat well.
5. Mix in apples and raisins.
6. Fold in the sifted flour.
7. Grease baking dish with a little oil.
8. Pour in mixture and bake for ~50min or until cooked.
